Therefore we can translate those words as \u201cCold food\u201d.<\/span><\/p>\n\n<h2>Origin:<\/h2>\n<p><span style=\"font-weight: 400;\">There are many versions of this traditional food that dates back to the Incas time.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">According to some historians, <\/span><b>Chiriuchu <\/b><span style=\"font-weight: 400;\">could be part of an Andean duality. It normally varies from 25 PEN to 30 PEN.<\/span><\/p>\n\n<h2><b>Chiriuchu Ingredients for 4 portions:<\/b><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">White popcorn, known as cancha<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">100 grams of fresh cheese<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Baked Guinea pig<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 and a half kg of chicken<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">a kind of jerky (chalona)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Fish eggs<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 carrot<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 stems of leek<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pepper and salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc taza de huacatay<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">50 grams of sea weed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 chorizos (pork sausages)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 hot pepper in slices<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Torreja (a Spanish omelette with corn flour, compis potatoes, yellow squash, onion greens, and spices)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 beaten eggs<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">50 grams of corn flour<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">130 grams of mashed pumpkin<\/span><\/li>\n<\/ul>\n<h4><b>Preparation:<\/b><\/h4>\n<ol>\n<li><span style=\"font-weight: 400;\"> Preparation of Chiriuchu begins one day earlier. First, the guinea pig is baked, and then the poultry and beef jerky are boiled in a pot, then chopped into pieces and put in a bowl. The corn cake must be prepared on the day of serving.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Then, the pieces of cheese, morcilla, tull\u00e1n (guinea pig\u2019s boiled tripe), and rocoto thinly sliced are put in a bowl. Finally, all these are served in a dish to taste (it is recommended to try this dish cold).<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Other ingredients regularly added to this dish are fried fish roes and Andean chulpe corn. You can add cheese and hot pepper (rocoto) as decoration.\u00a0<\/span><\/li>\n<\/ol>\n<p><b>Note:<\/b><span style=\"font-weight: 400;\"> Baked Guinea pig is the soul of the dish followed by the torreja. The secret to enjoy it more is to try all the ingredients at the same time, in one big bite.
